Homemade Caramel Corn

This yummy, buttery caramel corn is great to make year-round, but I especially love and look forward to making it in Autumn.
It's always a hit with my family & friends, as you can see by my nephews smiles.  But be warned, it's addictive and gets gobbled up quickly.

I decided to try Land O' Lakes European Style Super Premium Butter in my most recent batch of caramel corn, and it worked great. It's a NEW kind of butter Land O' Lakes has added to their delicious line of butters. And thanks to BzzAgent and Land O' Lakes, I was recently given the great opportunity to try a complimentary package of it.

I've been using Land O Lakes European Style Super Premium Butter for a month, and the following recipe for Homemade Caramel Corn is one of my favorite ways to use it.

HOMEMADE CARAMEL CORN

An easy recipe for yummy homemade caramel corn.

INGREDIENTS:

  • 5 quarts / 20 cups Popped Popcorn (made from 1/2 cup + 2 Tbsp unpopped kernels)
  • 2 cups Packed Brown Sugar 
  • 1 cup Butter (I used Land O Lakes European Style Super Premium Salted Butter)
  • 1/2 cups Light Corn Syrup 
  • 1 1/4 tsp Vanilla Extract 
  • 1 tsp Baking Soda 
  • 1 tsp Salt 
  • Non-Stick Cooking Oil Spray or Butter

DIRECTIONS:

Preheat oven to 250°F. Line a rimmed baking sheet or baking pan with aluminum foil or parchment paper, and grease with additional butter or cooking oil spray.
Spread popped popcorn onto baking sheets, and set aside.
In large saucepan, combine the brown sugar, butter, and corn syrup. 
Boil the mixture for 5 minutes, then remove from the heat. Add vanilla extract, baking soda, and salt. Stir thoroughly. (the mixture will foam up) 
Pour mixture over the popped popcorn and mix well.  
Bake at 250°F for 40 minutes. Stirring every 15 minutes.

Remove from oven and cool. 
Once cooled to room temperature , use your hands or a spoon to break up the caramel corn. Serve and Enjoy! 
Can store in an airtight container up to a week.
OPTIONAL ADDITIONS: 
Nuts - You may stir a can of nuts into the popcorn before pouring the caramel over and baking.
Other Additions - Dried Fruit, Chocolate Chips, etc may be added after baking.  

TIPS:  
UNPOPPED POPCORN KERNELS TO POPPED POPCORN CONVERSIONS 
1 oz = 2 Tbsp = 1/8 cup unpopped popcorn kernels = 4 cups = 1 quart popped popcorn 
5 oz = 1/2 cup + 1/8 cup unpopped popcorn kernels = 20 cups = 5 quarts popped popcorn
